Arrowroot, native to the tropical regions of the Americas, is a perennial herb with long, narrow, arrow-shaped leaves and white or pink tuberous roots. The plant was highly valued by indigenous peoples for its edible roots, which were ground into a starch used to make a porridge or thickener for various dishes.
